  • ¼ teaspoon pepper
  • ⅓ cup maple syrup + 2 tablespoons
  • ⅓ cup chopped walnuts
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 200°C (400°F) and prepare the sweet potatoes by slicing them into ½-inch thick rounds.
  2. In a bowl, combine the sweet potato slices with melted butter, 1 teaspoon cinnamon, salt, and pepper until evenly coated.
  3. Spread the seasoned slices on a baking tray in a single layer and roast for about 25–30 minutes until fork-tender.
  4. While roasting, mix maple syrup, chopped walnuts, remaining cinnamon, and thyme in a bowl for the topping.
  5. Once the sweet potatoes are golden brown at the edges, spoon about 1 teaspoon of the walnut mixture onto each slice and return to the oven for an additional 8–10 minutes until bubbling.
