3 large red apples
1 3/4 cups apple juice
2 tablespoons apple cider vinegar
1/2 cup brown sugar
1 teaspoon vanilla bean paste (or extract)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/8 teaspoon salt
Instructions
Core and chop the apples into large chunks. Place them in a pot with apple juice and apple cider vinegar. Bring to a boil, then reduce heat to simmer and cover for about 30 minutes until soft.
Stir in brown sugar, vanilla bean paste (or extract), cinnamon, nutmeg, cloves, and salt.
Blend the mixture until smooth using an immersion blender or standard blender.
Return the mixture to the pot and cook uncovered over medium heat for another 30-45 minutes, stirring occasionally until thickened.
