  • 450g flank or sirloin steak
  • 1½ cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup long-grain white rice
  • Fresh cilantro, chopped
  • Lime wedges
  • Avocado slices
  • Sliced jalapeños
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 2 tsp ground cumin
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 1 tsp chili powder
  • 2 garlic cloves, finely chopped
  • 2 cups broth or water

Instructions

  1. Season the steak with olive oil, paprika, cumin, garlic powder, salt, and pepper. Sear in a hot skillet for 4–5 minutes on each side until desired doneness.
  2. Let the steak rest before slicing.
  3. Rinse rice under cold water. In a pot, heat olive oil and toast rice with garlic powder; then add broth/water and cook until fluffy.
  4. In the same skillet used for the steak, melt butter and sauté garlic until fragrant. Add milk and bring to a simmer.
  5. Gradually stir in shredded cheeses until melted and smooth; season with cumin, chili powder, salt, and pepper.
  6. Serve the fluffy rice topped with sliced steak and queso sauce; garnish with cilantro, lime wedges, avocado slices, and jalapeños.
