  • 1 1/2 cups dark chocolate chips or chunks
  • 1 cup sugar
  • 1/4 cup dark brown sugar
  • 3 eggs, at room temperature
  • 1 tsp espresso powder (optional)
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 package candy eyes
  • 20 oz semi-sweet or milk chocolate chips
  • 1 tbsp coconut oil
  • 1 cup powdered sugar
  • 23 tbsp heavy cream, to thin

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter and one cup of dark chocolate chips together in a microwave-safe bowl.
  3. In a stand mixer, beat eggs until frothy; then mix in the melted chocolate mixture.
  4. Combine flour, cocoa powder, baking powder, and salt into the chocolate mixture until just combined.
  5. Spread batter into a baking pan and bake for 25–30 minutes until a toothpick comes out with moist crumbs.
  6. Let brownies cool; meanwhile, melt more chocolate with coconut oil for coating.
  7. Dip each brownie into the melted chocolate and let excess drip off.
  8. Prepare icing by whisking powdered sugar with heavy cream, then pipe onto brownies as 'bandages' and add candy eyes.
