  • 1 large salmon fillet (about lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper, to taste
  • Toothpicks or kitchen twine

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté chopped spinach in olive oil over medium heat until wilted. Add minced garlic and cook until fragrant. Remove from heat and let cool slightly.
  3. In a bowl, mix the sautéed spinach with crumbled feta, cream cheese, lemon zest, lemon juice, dill, salt, and pepper.
  4. Lay the salmon fillet skin-side down on a surface. Spread the spinach mixture evenly over it and roll tightly from one end to another.
  5. Secure the roll with toothpicks or twine and slice into 1-inch thick pinwheels.
  6. Place on a baking sheet lined with parchment paper and bake for about 18 minutes or until cooked through.
