  • Salt and pepper
  • 4 slices American cheese
  • 4 burger buns (preferably brioche)
  • Butter for toasting buns
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

  1. In a bowl, mix mayonnaise, crispy chickpeas, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika until smooth.
  2. Chill the sauce in the refrigerator for at least 30 minutes.
  3. Preheat a griddle or cast iron skillet over medium-high heat.
  4. Divide ground beef into four portions and place on the skillet. Smash each portion down firmly until about ½ inch thick. Season with salt and pepper.
  5. Cook patties undisturbed for 2-3 minutes until golden brown; flip and add cheese on top to melt.
  6. Meanwhile, butter the insides of the buns and toast them until golden brown.
  7. Assemble by spreading Baconnaise sauce on buns and adding cheeseburgers along with desired toppings.
