  • 1 pound cherry tomatoes
  • 1 head garlic
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 pound spaghetti or your choice of pasta
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Rinse and dry cherry tomatoes; place in a bowl.
  3. Cut the top off the head of garlic.
  4. Drizzle tomatoes with 2 tablespoons olive oil; season with salt, pepper, and optional red pepper flakes.
  5. Spread tomatoes on a baking sheet with the garlic cut side up; roast for 25-30 minutes until blistered.
  6. Cook pasta according to package instructions; reserve 1 cup pasta water before draining.
  7. Squeeze roasted garlic into a bowl and mash with tomatoes.
  8. Combine with remaining olive oil, optional balsamic vinegar, cooked pasta, and reserved pasta water until desired consistency is reached.
  9. Fold in basil and serve topped with grated cheese.
