Ingredients

Scale
  • 4 ripe but firm pears (Bartlett, Anjou, or Bosc)
  • 2 tablespoons unsalted butter, melted
  • ¼ cup crumbled blue cheese (or Gorgonzola for a milder taste)
  • ¼ cup toasted walnuts, chopped
  • 2 tablespoons honey (plus more for drizzling)
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon cinnamon (optional)
  • Fresh thyme (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice the pears in half lengthwise; remove cores.
  3. In a bowl, mix melted butter, honey, lemon juice, and cinnamon. Brush this mixture over the pear halves.
  4. Place the pears cut-side up on a parchment-lined baking sheet and roast for 20-25 minutes until tender and golden-brown.
  5. Remove from the oven and sprinkle with blue cheese and walnuts; return to oven for an additional 5 minutes until cheese melts slightly.
  6. Drizzle with extra honey before serving and garnish with thyme if desired.
