  • 1/4 teaspoon ground cloves
  • 1/2 cup pumpkin puree
  • 1/4 cup + 1 tablespoon milk
  • 1/4 cup unsalted butter
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a casserole dish.
  2. In one bowl, sift together all-purpose and whole wheat flours, baking powder, salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, melted butter, and vanilla extract until smooth.
  4. Combine wet and dry ingredients gently until just mixed. Spread in the greased dish.
  5. Mix brown sugar with chopped pecans and sprinkle over the batter.
  6. Pour hot water over the topping without stirring.
  7. Bake for about 40 minutes until set in the center.
