  • 2 cups old-fashioned oats
  • 1 2/3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup melted butter (cooled)
  • 1 cup sugar
  • 3/4 cup packed brown sugar
  • 1 egg yolk (room temperature)
  • 2 tsp vanilla extract
  • 1 cup pumpkin puree (blotted)
  • 2 cups butterscotch chips (divided)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the oats, flour, baking soda, cinnamon, and pumpkin pie spice.
  3. In another bowl, whisk together the melted butter, sugar, brown sugar, egg yolk, vanilla extract, and pumpkin puree until smooth.
  4. Combine wet and dry ingredients; stir until just mixed.
  5. Fold in 1 1/2 cups of butterscotch chips.
  6. Drop tablespoon-sized dollops onto lined baking sheets and flatten slightly.
  7. Top each cookie with a few extra butterscotch chips.
  8. Bake for 13-15 minutes until edges are golden; cool on the sheets for a few minutes before transferring to racks.
