  • ½ cup light brown sugar
  • 2 teaspoons pure vanilla extract
  • 2 teaspoons pumpkin pie spice
  • 6 large eggs
  • 14 to 15 ounces cubed French bread
  • ½ cup cold cubed salted sweet cream butter
  • ½ cup light brown sugar
  • ½ cup all-purpose flour
  • 1 teaspoon pumpkin pie spice
  • 1 cup chopped pecans

Instructions

  1. In a large mixing bowl, whisk together the whole milk, pumpkin puree, sugars, vanilla extract, pumpkin pie spice, and eggs until smooth.
  2. Spray a 9×13 baking dish with nonstick cooking spray and layer the cubed French bread evenly at the bottom.
  3. Pour the pumpkin mixture over the bread cubes and gently press down to soak.
  4. Cover with plastic wrap and refrigerate for at least 3 hours or overnight.
  5. Preheat your oven to 350°F (175°C). Prepare the streusel topping by combining butter, brown sugar, flour, and spices until crumbly; stir in chopped pecans.
