  • 3 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • 1 cup fresh peaches (pureed)
  • 1 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar twice into a bowl.
  3. In another bowl, whip egg whites until foamy, gradually adding granulated sugar until stiff peaks form.
  4. Gently fold the dry ingredients into the whipped egg whites until combined.
  5. Pipe small circles onto the prepared sheets and let them rest for about 30 minutes.
  6. Bake for 15-18 minutes until firm yet slightly soft when pressed; allow cooling completely.
  7. Whip heavy cream with powdered sugar and vanilla until fluffy, then fold in pureed peaches.
  8. Assemble by sandwiching the peach filling between two macaron shells.
