  • 1 ½ cups granulated sugar
  • 4 large eggs (room temperature)
  • ⅓ cup all-purpose flour
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 teaspoon almond extract

Instructions

  1. Preheat your oven to 325°F and grease a loaf pan.
  2. In a bowl, mix chopped peaches with lemon juice, sugar, cornstarch, melted butter, vanilla extract, and almond extract.
  3. Beat together cream cheese and butter until smooth. Gradually add sugar until fluffy.
  4. Incorporate eggs one at a time along with extracts.
  5. Whisk together flours and baking powder; fold into the wet mixture gently.
  6. Fold in half of the peach mixture into the batter.
  7. Pour half the batter into the pan, layer with remaining peaches, then top with remaining batter.
