  • 1 tbsp olive oil
  • 1 red onion
  • 3 large cloves garlic
  • 1 carrot (diced)
  • 1 leek (green ends included, diced)
  • 1 tsp dried thyme
  • 120 g orzo pasta
  • 1.5 l vegetable stock
  • 34 sprigs fresh dill
  • Salt & pepper to taste
  • 1/2 lemon (squeezed)
  • Extra virgin olive oil (to garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped red onion, garlic, diced carrot, and leek. Season with salt and pepper. Sauté for about 6 minutes until softened.
  2. While vegetables are cooking, dissolve a vegetable stock cube in boiling water to create stock.
  3. Add the orzo pasta and vegetable stock to the pot, along with dried thyme. Let simmer for approximately 12 minutes until the orzo is cooked through.
  4. Taste and adjust seasoning if needed. Squeeze in lemon juice and stir in fresh dill before serving.
  5. Ladle into bowls, drizzle with extra virgin olive oil, and garnish with additional dill.
