  • 8 ounces mozzarella cheese (cut into cubes)
  • 1 tablespoon fresh rosemary (chopped)
  • 1/2 cup grated Parmesan cheese
  • Coarse sea salt (for topping)

Instructions

  1. In a mixing bowl, combine warm water, yeast, and sugar. Let sit for about 5 minutes until foamy.
  2. In another bowl, whisk together flour and salt. Gradually mix into the yeast mixture until combined.
  3. Knead the dough by hand or with a stand mixer for about 5-8 minutes until smooth.
  4. Fold in chopped rosemary and grated Parmesan. Place the dough in a greased bowl and cover it for about an hour to rise.
  5. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  6. Punch down the dough, divide into 8 pieces, flatten each piece, fill with mozzarella, seal, and shape into pretzels.
  7. Boil pretzels in water mixed with baking soda for about 30 seconds each; drain.
  8. Brush with melted butter, sprinkle with coarse sea salt, and bake for 12-15 minutes until golden brown.
