Ingredients

Scale
  • 1 cup quinoa
  • 1 ½ cups water
  • 1 medium English cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • ½ cup pitted Kalamata olives
  • ½ cup crumbled feta cheese (or avocado for a vegan option)
  • Juice of 1 lemon (about 3 tbsp)
  • 4 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water and combine it with water in a saucepan. Bring to a boil over medium heat.
  2. Once boiling, reduce heat, cover, and simmer for about 15 minutes until water is absorbed. Fluff with a fork.
  3. While quinoa cooks, chop the cucumber, halve the cherry tomatoes, slice the red onion, and chop parsley.
  4. In a small bowl or jar, whisk together lemon juice, olive oil, salt, and pepper.
  5. Allow the quinoa to cool slightly before mixing with chopped vegetables in a large bowl.
  6. Gently fold in Kalamata olives and crumbled feta cheese.
  7. Drizzle dressing over the salad and mix lightly. Let sit for about 30 minutes before serving to enhance flavors.
