  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 cup buttermilk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped green onions
  • Vegetable oil for frying

Instructions

  1. Peel and cut russet potatoes into thin fry shapes. Rinse in cold water to remove excess starch, then pat dry.
  2. In a bowl, mix flour with Cajun seasoning, garlic powder, onion powder, paprika, salt, black pepper, and cayenne (if using). Dip each fry into buttermilk and dredge in the seasoned flour mixture.
  3. Heat vegetable oil in a deep fryer or pot to 350°F (175°C) and fry the coated fries in small batches for about 4-5 minutes until golden brown.
  4. Sprinkle cheddar and Monterey Jack cheese over hot fries, adding jalapeños and green onions as desired.
