Ingredients

Scale
  • 2 chicken breasts (cubed)
  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream (or coconut cream for dairy-free)
  • 1 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare all ingredients by slicing chicken, halving tomatoes, and measuring liquids.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (5–7 minutes) and set aside.
  3. In the same skillet, sauté minced garlic for 30 seconds before adding cherry tomatoes; cook until softened.
  4. Stir in chicken broth, bringing to a simmer before adding cream along with lemon zest and juice. Remove from heat briefly while incorporating lemon juice to prevent curdling.
  5. Add gnocchi; let cook for 3–4 minutes until tender. Stir in spinach until wilted.
  6. Return chicken to the skillet; mix well, adjust seasoning, and garnish with herbs before serving.
