  • 1/2 lb ground beef
  • 1/2 lb ground beef (85/15 meat to fat ratio)
  • 1/2 cup plain bread crumbs
  • 1/2 cup fresh grated parmesan cheese
  • 1 egg
  • 1/2 yellow onion (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp dried parsley
  • 2 tsp dried basil
  • 1 tsp crushed red pepper flakes (more or less to taste)
  • 1 tsp salt (more or less to taste)
  • 1/2 tsp black pepper (more or less to taste)
  • 2 tbsp olive oil (for cooking)
  • 1/2 yellow onion (diced)
  • 2 medium carrots (diced)
  • 23 tomatoes on a vine (diced)
  • 4 garlic cloves (minced)
  • 1 cup water
  • 56 cups beef stock
  • 4 oz tomato paste
  • 1/21 tsp salt (more or less to taste)
  • 1 tsp red pepper flakes (more or less to taste)
  • 1 tbsp dried parsley
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1416 oz gnocchi (homemade or ready-to-use)
  • 1 rind of parmesan cheese (optional)
  • 1/4 cup fresh grated or shaved parmesan cheese

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, parmesan cheese, egg, minced onion, minced garlic, parsley, basil, red pepper flakes, salt, and black pepper. Mix gently and form into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides; then remove and set aside.
  3. In the same pot, sauté diced onions and carrots until softened. Add minced garlic and cook until fragrant.
  4. Stir in diced tomatoes, water, beef stock, and tomato paste. Season with herbs and spices; add parmesan rind if using.
  5. Return meatballs to the pot and let simmer for 20 minutes to meld flavors.
  6. Add gnocchi to the pot; cook until they float to the top (about 3 minutes). Serve hot with extra grated parmesan.
