  • 3/4 cup granulated sugar
  • 3/4 cup light corn syrup
  • 3 large egg whites (room temperature)
  • 1/2 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. In a medium heavy-bottom saucepan, combine water, granulated sugar, and light corn syrup. Heat over medium-high heat without stirring until it reaches 240°F.
  2. While the syrup heats, place egg whites and cream of tartar in a stand mixer bowl. Whip on medium speed until soft peaks form.
  3. Once the syrup reaches temperature, carefully pour it into the whipped egg whites in a steady stream while mixing at medium speed.
  4. Increase mixer speed to medium-high and whip for about 7-8 minutes until thick and fluffy. Add vanilla extract and mix until well combined.
  5. Allow the fluff to cool completely before using or storing in an airtight container at room temperature.
