  • 1 ½ lbs steak (sirloin, ribeye, or New York strip), cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 8 oz small pasta shells
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (optional)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Cook the pasta in salted boiling water until al dente. Reserve half a cup of starchy water before draining.
  2. Pat steak bites dry and season with salt, pepper, smoked paprika, and red pepper flakes.
  3. In a skillet, heat olive oil over medium-high heat and sear steak bites for about two minutes on each side until browned. Remove from skillet.
  4. Lower heat, add butter and minced garlic to the skillet, cooking until fragrant. Return steak bites to coat them in the garlic butter.
  5. In another pan, melt more butter, add minced garlic, then heavy cream and bring to simmer. Stir in Parmesan cheese until smooth.
  6. Combine drained pasta with the creamy sauce, using reserved pasta water if needed to adjust consistency.
  7. Serve steak bites alongside or mixed with pasta, garnishing as desired.
