  • 8 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons peach puree (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, and salt.
  3. In another bowl, cream together the butter, honey, and sugar until fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually add dry ingredients alternately with milk to the creamed mixture until just combined. Fold in diced peaches carefully.
  5. Fill cupcake liners two-thirds full and bake for 18-22 minutes or until a toothpick comes out clean. Cool completely before frosting.
  6. For frosting, whip cream cheese and butter until smooth; gradually add powdered sugar and honey until fluffy.
