  • 2 medium sweet potatoes, peeled and diced
  • 1 avocado, sliced
  • 1 cup cottage cheese (low-fat or full-fat)
  • 1 yellow onion, diced
  • 2 tbsp olive oil
  • 1 packet taco seasoning (or homemade)
  • 2 tbsp hot honey
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F. Toss diced sweet potatoes with olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast on a baking sheet for about 25 minutes until tender.
  2. In a skillet over medium heat, warm the remaining olive oil. Sauté diced onion until softened. Add ground beef and taco seasoning; cook until browned.
