  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup rolled oats
  • 1/2 cup unsalted butter (softened) – for cream filling
  • 4 ounces cream cheese (brick style)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract – for cream filling
  • 1/4 teaspoon salt – for cream filling
  • 1 tablespoon whipping cream (if needed)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, ginger powder, cinnamon, nutmeg, baking soda, and salt.
  3. In a large bowl, cream softened butter with brown and granulated sugars until fluffy.
  4. Add molasses and egg to the butter mixture; mix well.
  5. Gradually incorporate dry ingredients into the wet mixture and fold in rolled oats.
  6. Drop tablespoon-sized portions of dough onto lined baking sheets and bake for about 9 minutes or until edges are set.
  7. While cooling, prepare the cream filling by beating softened butter and cream cheese until smooth; gradually mix in powdered sugar.
  8. Once cookies are completely cool, spread or pipe cream filling between two cookie halves.
