  • 4 chicken fillets
  • 1 tbsp olive oil
  • 4 garlic cloves (minced)
  • 1 shallot (finely chopped)
  • 2 tbsp tomato paste
  • ½ cup chicken broth
  • 1 can (14 oz) cherry tomatoes
  • 2 mozzarella balls (chopped)
  • Fresh basil leaves for garnish

Instructions

  1. Season the chicken fillets with salt, pepper, garlic powder, and paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Cook the chicken for about 5 minutes on each side until golden brown. Remove from the skillet.
  3. In the same skillet, sauté minced garlic and chopped shallot until fragrant, about 2 minutes. Deglaze with apple vinegar.
  4. Stir in salt, pepper, dried basil, and tomato paste; cook for 1 minute. Add chicken broth and cherry tomatoes; bring to a boil then simmer for 5 minutes.
  5. Return the chicken to the skillet; sprinkle mozzarella and basil on top. Simmer until cheese melts or bake in an oven preheated to 200°C (400°F) for 10 minutes until bubbly.
