  • 1 large bulb of garlic
  • 1.3 kg (2.8 lb) baking potatoes
  • 5 tbsp (75g) butter
  • 2 tbsp heavy cream
  • 60g (3/4 cup) freshly grated Parmesan cheese
  • 4 large egg yolks
  • Olive oil
  • Salt & pepper

Instructions

  1. Preheat your oven to 180°C (356°F). Roast the garlic wrapped in foil for about 50-60 minutes until soft.
  2. While the garlic roasts, peel and chop the baking potatoes into large chunks. Boil in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them steam dry for 5 minutes. Mash with melted butter, cream, roasted garlic, and Parmesan until smooth. Season with salt and pepper.
  4. Stir in egg yolks one at a time until fully incorporated.
  5. Pipe the mixture into swirls on a lined baking tray. Drizzle with melted butter.
  6. Bake at 200°C (400°F) for 15-20 minutes or until golden brown.
