  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 5 Onions (thinly sliced)
  • 300 g Cavatappi Macaroni
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water (for béchamel)
  • Fresh Parsley (for garnish)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add sliced onions and sauté for 30–40 minutes until caramelized.
  2. In the same skillet, prepare the béchamel by whisking flour into melted butter, then gradually add heavy cream to thicken.
  3. Combine two-thirds of the caramelized onions with the béchamel sauce; season with salt, pepper, and parsley.
  4. Cook cavatappi macaroni until just shy of al dente, then mix with the béchamel sauce.
  5. Transfer to a baking dish, top with remaining onions and breadcrumbs, then bake at 350°F (175°C) for 10–15 minutes until golden brown.
