  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese
  • ½ cup Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth or vegetable broth
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme
  • ½ teaspoon sugar (optional)

Instructions

  1. Caramelize onions by cooking sliced onions in a skillet with butter and olive oil over medium heat until golden brown (20-25 minutes).
  2. Slice Yukon Gold potatoes into ¼-inch thick rounds.
  3. Grease a baking dish with butter, layer half of the potato slices, followed by half of the caramelized onions and cheeses. Repeat layers.
  4. Whisk together cream (or milk), thyme, salt, and pepper; pour over assembled layers.
  5. Cover with foil and bake at 375°F (190°C) for 45 minutes; remove foil for the last 15 minutes to crisp up.
