  • 2 tbsp ghee or sunflower oil
  • 1 onion, finely chopped
  • 3 chicken breasts, cut into bite-sized pieces
  • 2 garlic cloves, minced
  • 2 tsp minced ginger
  • 1 tsp ground cumin
  • 1½ tsp ground coriander
  • 1½ tsp garam masala
  • ½ tsp mild chili powder (optional)
  • ½ tsp ground turmeric
  • ¼ tsp salt
  • ¼ tsp white pepper
  • 2 tbsp tomato purée
  • ½ cup plain yogurt
  • ½ cup coconut cream
  • 2 tbsp ground almonds
  • 1 tbsp sugar
  • 4 tbsp double cream

Instructions

  1. Heat ghee/oil in a large frying pan over medium heat. Sauté the onion until softened (about 5 minutes).
  2. Add chicken pieces and cook until lightly golden (about 5 minutes).
  3. Stir in garlic, ginger, spices, and tomato purée; cook for another 2 minutes.
  4. Mix in yogurt, coconut cream, ground almonds, and sugar. Bring to a gentle boil, then simmer for 6-8 minutes until chicken is cooked through.
  5. Stir in double cream before removing from heat. Serve over rice or with flatbread.
