  • ¼ cup green onion (finely chopped)
  • ¼ cup bell pepper (finely diced)
  • 2 tbsp cilantro (finely chopped)
  • 2 cloves garlic (minced)
  • Juice of ½ large lime
  • ¾ tsp kosher salt
  • ½ tsp red pepper flakes
  • 1 tbsp olive oil (for cooking)
  • 3 cups mixed greens (divided)
  • 1 avocado (sliced)
  • ½ lime
  • Salt (to taste)
  • 2 tbsp cilantro (finely chopped)
  • 2 tomatoes (sliced or chopped)

Instructions

  1. In a bowl, combine ground chicken, green onions, bell pepper, cilantro, garlic, lime juice, salt, and red pepper flakes. Mix until just combined.
  2. Divide the mixture into four equal portions and shape into patties using wet hands to prevent sticking.
  3. Heat olive oil in a pan over medium-high heat. Cook patties for about 2 ½ minutes on each side until golden brown and fully cooked.
  4. While cooking, toss mixed greens with additional olive oil and lime juice in a separate bowl.
  5. Serve the cooked patties on top of the salad and garnish with sliced avocado and tomatoes.
