  • 2 cans great northern beans, drained
  • 1 can whole corn kernels, drained
  • 1 can diced green chilies
  • 1 can diced tomatoes with green chilies
  • 1 can pure pumpkin puree
  • 4 cups chicken stock
  • 1 1/2 teaspoon ground cumin
  • 1 1/2 teaspoon chili powder
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper
  • 8 ounces plain cream cheese
  • green onion (for garnish)

  • sour cream (for garnish)

Instructions

  1. Remove casings from turkey sausage and brown in a skillet over medium heat for 8-10 minutes.
  2. In the crockpot, combine cooked sausage with beans, corn, chilies, tomatoes, pumpkin puree, chicken stock, and spices. Stir well.
  3. Cook on low for 6-8 hours until flavors meld together.
  4. About 20 minutes before serving, add cream cheese cut into chunks; stir until melted and combined.
