Ingredients

Scale
  • 8 ounces pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach leaves
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Cook the pasta: Boil salted water and cook pasta according to package instructions until al dente (8-10 minutes). Reserve ¼ cup of pasta water.
  2. Sauté chicken: In a skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper and cook for 5-7 minutes until golden brown. Add garlic in the last minute.
  3. Add veggies: Stir in cherry tomatoes and spinach; cook for an additional 2-3 minutes until spinach wilts.
  4. Make it creamy: Lower heat; mix in ricotta cheese and reserved pasta water until creamy. Stir in Parmesan cheese.
  5. Combine: Toss cooked pasta with the sauce mixture until well-coated.
  6. Serve: Garnish with basil and extra Parmesan if desired.
