  • 4 cups beef broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can black beans
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • Sliced green onions
  • Extra shredded cheese for topping
  • Crushed tortilla chips for garnish

Instructions

  1. Brown the ground beef in a large pot over medium heat.
  2. Sauté diced onion and minced garlic until translucent.
  3. Add beef broth, diced tomatoes, black beans, corn, and potatoes; stir to combine.
  4. Season with smoked paprika, chili powder, ground cumin, salt, and black pepper.
  5. Simmer for about 20 minutes until potatoes are tender.
  6. Stir in heavy cream and shredded cheddar cheese until melted.
  7. Serve hot topped with green onions and crushed tortilla chips.
