  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat; sauté diced onion and bell pepper until softened (about 3–4 minutes).
  3. Stir in chopped spinach and cook until wilted (2–3 minutes). Season with garlic powder, salt, and pepper; remove from heat.
  4. In a bowl, whisk together eggs, milk, and cottage cheese. Add Italian seasoning and more salt and pepper to taste.
  5. Fold in shredded cheese and cooked vegetables until well combined.
  6. Grease a 9-inch pie dish; pour the mixture evenly into the dish.
  7. Bake for 40–45 minutes or until golden on top and set in the center.
  8. Cool for 5–10 minutes before slicing and serving.
