  • 2 ribeye or New York strip steaks (1.5 inches thick)
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper
  • 1 cup fresh parsley leaves, finely chopped
  • 3 garlic cloves, minced
  • 2 tbsp fresh oregano leaves, finely chopped
  • 1/2 cup extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste

Instructions

  1. Bring steaks to room temperature (30-45 minutes).
  2. Prepare chimichurri sauce: Combine parsley, garlic, oregano, olive oil, apple cider vinegar, red pepper flakes, salt, and black pepper in a bowl; let sit for at least 10 minutes.
  3. Season steaks with salt and pepper.
  4. Heat a skillet over high heat; add olive oil.
  5. Sear steaks on one side for 3-4 minutes; flip and cook for another 3-4 minutes for medium-rare.
  6. Let rest for 5-10 minutes before slicing against the grain.
  7. Serve with chimichurri sauce drizzled over the top.
