  • 16 oz frozen diced butternut squash
  • 1.5 cups fresh chopped tomatoes
  • 1/2 yellow onion
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 lb pasta (your choice)
  • 1/3 cup reserved pasta water

Instructions

  1. Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.
  2. Spread the frozen butternut squash, chopped tomatoes, and sliced onion on the baking sheet. Drizzle with olive oil and season with salt, pepper, and thyme.
  3. Roast in the preheated oven for about 20 minutes until tender.
  4. Meanwhile, cook your pasta according to package instructions, reserving 1/3 cup of the starchy pasta water before draining.
  5. Transfer the roasted vegetables to a blender, add reserved pasta water, and blend until smooth.
  6. Pour the creamy sauce over the cooked pasta, tossing gently to coat before serving.
