  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 4 salmon fillets (about pounds)
  • 2 medium peaches (pitted, thinly sliced)
  • Garlic (minced)
  • Kosher salt
  • Black pepper
  • Red pepper flakes

Instructions

  1. In a bowl, mix peach preserves, olive oil, soy sauce, apple cider vinegar, minced garlic, salt, black pepper, and red pepper flakes to create the marinade. Reserve half for later.
  2. Marinate the salmon fillets in the remaining mixture in a sealed bag for at least 30 minutes.
  3. Preheat your oven to 375°F.
  4. Heat olive oil in an oven-safe skillet over medium-high heat and sear the marinated salmon skin-side up for 2-3 minutes until golden brown.
  5. Flip the fillets skin-side down, add sliced peaches around them, and cook for another 2-3 minutes.
  6. Pour reserved marinade over the salmon and peaches.
  7. Bake in the oven for about 12-15 minutes until the internal temperature reaches 145°F.
  8. Serve immediately garnished with parsley.
