  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked smoked chicken sausage
  • 5 cloves garlic, minced
  • 2 tablespoons olive oil
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C (400°F). Toss butternut squash with olive oil, salt, and pepper; spread on a baking sheet and roast for 15-20 minutes until tender.
  2. On another baking sheet, toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until crispy.
  3. Cook bow tie pasta according to package directions until al dente. Drain and set aside.
  4. In a skillet over medium heat, brown sliced chicken sausage until golden; remove from skillet.
  5. In the same skillet, sauté garlic in olive oil until fragrant. Add butter and melted; then mix in cooked pasta along with salt, pepper, and smoked paprika.
  6. Fold in roasted vegetables and chicken sausage; mix well and adjust seasoning if needed.
