  • 184 grams unsalted butter
  • 100 grams dark brown sugar
  • 100 grams granulated sugar
  • 1 egg
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 5 grams cornstarch
  • 66 grams granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)
  • Juice from one small lemon
  • Pinch of salt

Instructions

  1. Prepare the apples by tossing them with dark brown sugar, cinnamon, salt, and lemon juice. Cook over low-medium heat until caramelized (about 10 minutes). Cool in the fridge.
  2. Brown the unsalted butter in a pot over medium heat until golden and nutty; cool slightly.
  3. In a bowl, whisk together flour, baking soda, cream of tartar, cinnamon, salt, and cornstarch.
  4. Combine cooled butter with sugars and vanilla; mix in the egg. Fold in the cooled apples.
  5. Gradually add dry ingredients until just combined. Chill dough for 2-3 hours.
  6. Preheat oven to 350°F (175°C). Form dough into balls, roll in cinnamon sugar, and place on lined baking sheets.
  7. Bake for 12-14 minutes until edges are set but tops are puffy. Cool before serving.
