  • 12 thick-cut slices of brioche bread
  • 1 3/4 lb apples, peeled and diced
  • 4 tbsp salted butter
  • 2 1/2 tbsp all-purpose flour
  • 1 tsp apple pie spice
  • 3/4 cup brown sugar
  • 1/2 cup water
  • 1 cup milk of choice
  • 1 cup heavy cream
  • 1 1/2 tbsp salted butter
  • 1/4 cup + 3 tbsp granulated sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 4 eggs, at room temperature

Instructions

  1. Preheat oven to 350°F and prepare your baking pan by greasing it.
  2. In a saucepan, melt butter, then add flour and apple pie spice. Stir in brown sugar, diced apples, and water; cover and cook until apples are tender (about 10–15 minutes).
  3. Strain excess juices from the apples into a bowl.
  4. In another saucepan, whisk together milk, heavy cream, granulated sugar, cinnamon, vanilla extract, salt, melted butter; heat through but do not boil. Add eggs one at a time while whisking.
  5. Cut brioche into cubes; layer in the prepared pan with apple filling and pour custard over the top.
  6. Bake for 35–40 minutes until golden brown and slightly wobbly.
  7. Let it rest for 10 minutes before serving warm.
