  • 1 Tablespoon corn starch
  • 2 Tablespoons water (or more if needed)
  • 4 cups French bread, cut in small ½ inch cubes
  • 2 eggs
  • ½ cup milk
  • ¼ cup cream
  • 2 Tablespoons light brown sugar
  • ½ teaspoon vanilla extract
  • ¾ teaspoon cinnamon
  • 2 Tablespoons melted butter
  • 3 Tablespoons maple syrup
  • 1/3 cup chopped pecans

Instructions

  1. Prepare the apple filling by cooking chopped apples with brown sugar, lemon juice, and spices in a saucepan until slightly softened. Set aside to cool.
  2. Cut the French bread into small cubes and place in a large bowl.
  3. Whisk together eggs, milk, cream, brown sugar, and spices in another bowl. Pour over bread cubes and let soak for 15 minutes.
  4. Mix melted butter, maple syrup, and chopped pecans in a separate bowl for the topping.
  5. Preheat your oven to 350°F (175°C) and line a muffin pan with parchment paper.
  6. Fill each cavity with soaked bread mixture and top with apple filling and pecan topping.
  7. Bake for about 10 minutes, then add more pecan topping before baking for an additional 12-15 minutes until golden brown.
