  • 5 oz arugula
  • 1/4 cup thinly sliced red onion
  • 1/2 cup chopped figs
  • 1 cup pecan halves
  • 2 Tbsp maple syrup (for glazing)
  • 1/2 cup olive oil
  • 2 tsp maple syrup (for dressing)
  • 1 tsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1/2 tsp pepper
  • 1 garlic clove (minced)
  • 3 Tbsp balsamic vinegar
  • 1/41/2 tsp sea salt (or to taste)

Instructions

  1. Preheat your oven to 350°F (175°C). Toss pecans with maple syrup and sea salt. Spread on a parchment-lined baking sheet and toast for 5-7 minutes until fragrant.
  2. In a bowl, whisk together olive oil, maple syrup, lemon juice, Dijon mustard, minced garlic, balsamic vinegar, pepper, and salt.
  3. In a large salad bowl, layer arugula, sliced apples, figs, red onion, goat cheese crumbles (if desired), and toasted pecans. Drizzle with half the dressing and toss gently before serving.
